Baked Oatmeal Cups (Makes 12)
Preheat oven to 350
3 cups rolled oats
1/2 cup brown sugar
2 tsp cinnamon
2 tsp baking powder
1 tsp salt
1 cup milk
2 eggs
1/2 cup melted butter
2 tsp vanilla extract
3/4 cup dried fruit of choice (my family prefers cranberries, but you can use raisins or blueberries too)
Line a 12 cup muffin pan with paper liners
In a large bowl, mix together the oats, sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, butter, and vanilla. Stir in dried fruit. Using a 1/4 cup, carefully fill each paper liner with the oat mixture. Bake at 350 for 25-30 minutes or until the cups are brown. Serve warm or store in air tight container in the refrigerator for up to 3 days.
This recipe is very versatile. I have eliminated the cinnamon and the vanilla and exchanged it for maple extract and used nuts, like walnuts and pecans instead of fruit. My family loves it! You can also substitute applesauce for the eggs.
